Lemon Tea Cookies

Here is a cookie from Better Homes & gardens that is neither too sweet, nor too tart. The hint of almond extract in the cookie, and the subtle flavor of the lemon in the icing, make it the perfect accompaniment for a cup of hot tea.

1 c. butter,softened
1/2 c. sugar
1/2 tsp. almond extract or vanilla extract
pinch of salt
2-2 1/2 c. flour
In the bowl of your mixer, blend together the butter & sugar.Add the salt and extract.Add as much flour as you can without letting the dough become too crumbly(at least 2 cups).
Roll out the dough on a lightly floured surface.Cut into desired shapes.Bake at 325 degrees for about 10 minutes.they should be golden on the edges.
Once cooled, frost with the lemon icing.

Lemon Icing:
1/4 c. butter,softened
1 Tbsp. milk
2 tsp. lemon juice(fresh)
1/2 tsp. lemon zest
2 c. confectioners' sugar
In the bowl of your mixer, blend together the butter, milk, lemon juice & zest.Add the sugar.Add a bit more milk if necessary to make it easy to spread on your cookie.
