Cupcakes,Anyone?

Okay,when I find something good,I love to share!This recipe is one of those things.The cake is NOT my recipe,but that of The Barefoot Contessa,and I just had to share it.It is a delicious chocolate cake,made with freshly brewed coffee.The original recipe calls for a chocolate frosting.That is where I decided to change things.I snuck a little chocolate pudding inside the cupcake,then topped it with fresh whipped cream.It is a very indulgent dessert! Cupcake Recipe:
1 c. buttermilk
1/2 c. vegetable oil
2 eggs
1 tsp. vanilla
2 c. sugar
3/4 c. cocoa powder
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 c. freshly brewed coffee
  With an electric mixer,mix together the buttermilk,oil,eggs,and vanilla.In anaother bowl,mix together all of the dry ingredients.With your mixer on low speed,slowly add the wet ingredients to the dry.Then add the coffee.Spoon into a cupcake pan lined with cupcake liners and bake at 350 for 35-40 minutes.
Okay,now here is my spin on the rest.For the pudding,we are using jell-o chocolate fudge pudding mix(nothing fancy here).Prepare according to package directions,BUT,only use the pie filling directions.That means,only use 1 3/4 c. of milk,not 2 cups.Okay,after you have prepared that,cover with plastic wrap ,pushing it onto the surface of the pudding so a skin doesn't form.Refrigerate.
Now,for the whipped cream......
  2c. of heavy cream
  2 tsp. sugar
  1 tsp.  vanilla
   Whip together until the cream becomes thick,the time on this varies,depending on your mixer.Don't beat it at too high of a speed,or you may wind up with butter instead of whipped cream!The cream should hold its shape on the beaters of your mixer.Taste it to see if you would like it a little sweeter.If so,add a bit more sugar.
  Now the fun part!Take the pudding out of the refrigerator,and put into a pastry bag.Place the metal tip of the bag inside the cupcake and give a little squeeze.That's it!Now frost your cupcakes with the whipped cream,and add whatever decorations you want(grated chocolate,sprinkles,etc.)
  These cupcakes need to be kept refrigerated.I hope you enjoy them!
