Fruit Crumb Bars

Here is a great crumb cake/fruit bar to go with your morning coffee.The beauty of this recipe is its versatility.You can use any flavor of jam,just pick your favorite!I have used blackberry jam in this recipe.
1 stick of butter,(not ice cold,not room temperature,but somewhere in between)
2 egg yolks
1 c.sugar
2 c. flour
1 tsp. baking powder
1/2 tsp. cinnamon
1/8 tsp.salt
1/2 c. your favorite flavor of jam
1/4 c. confectioner's sugar
  In the bowl of your mixer,blend together butter & egg yolks.Combine all of the dry ingredients EXCEPT the confectioner's sugar.Add the dry ingredients to the butter mixture.After mixing,use your hands to blend the dough together.When you squeeze lumps of the dough together,it shouldn't fall apart.

   In a small,square baking pan,take half of the dough and just crumble it until the bottom of the pan is covered.Using your hands,press dough into the bottom of pan.Refrigerate for about 20 minutes.It should look like the picture above.Once you remove your dough from the refrigerator,spread 1/2 cup of your favorite jam on top of the dough.Then crumble the rest of the dough on top,covering the jam completely.Bake at 350 degrees for approximately 30 minutes.

  When cooled,sprinkle with confectioner's sugar,and cut into large squares or miniature squares.Enjoy!
