Cookies & Cream Cupcakes

   I found a great recipe today and decided to give it a twist!This recipe is not my own,but I have made some changes.The original calls for chocolate oreos,but I have decided to add both chocolate and vanilla oreos!This is sure to be a winner with the oreo lovers in my house.Check out the blog I found it on...it's a fun one! http://www.applesandtwinkies.com/ .

Ingredients:
1 stick of butter,softened
1-2/3 c. sugar
3 egg whites
2 tsp. vanilla
1 c. milk
2-1/4c.flour
1 tsp. baking powder
1/2 tsp. salt
12 chocolate oreo halves with cream
12 vanilla oreo halves with cream
10 crushed chocolate oreos
10 crushed vanilla oreos

Frosting Ingredients:
8 oz. cream cheese,softened(the bar,not the whipped)
6 tbsp. butter
1 tbsp. vanilla
4 c. powdered sugar
2 tbsp. cream
In the bowl of your mixer,blend together the cream cheese & butter.Add the vanilla.Slowly add the sugar and blend until you have a nicely whipped frosting,about 2-3 minutes.Add the cream,and blend for about 4 minutes until you have a fluffy frosting.
    In a cupcake pan ,lined with cupcake liners,place the oreo halves on the bottom of each liner,cream side up.
   In a bowl,mix together the flour,salt and baking powder.
  In the bowl of your mixer,blend the butter and sugar.Add the egg whites and vanilla.Add the dry ingredients then the milk.Divide the batter in half.Stir the crushed chocolate oreos into one half,and the crushed vanilla oreos into the other half.
    Pour the vanilla batter into the liners that have a vanilla cookie on the bottom.Pour the chocolate oreo batter into the liners that have a chocolate cookie on the bottom.Bake at 350 degrees for 18-20 minutes.
Remove from the oven and let cool.Frost with the cream cheese frosting,and garnish with oreos if desired.Enjoy!
***Feel free to add only one type of oreo..we have a few family members that like one or the other,so I used both!
***What to do with all of the extra halves without cream?Well,if you do not want to eat them,turn them into crumbs using your food processor and keep them in your freezer.When it is time to make a crust for a chocolate chip mint ice-cream pie,or chocolate cheese cake,you'll be one step ahead !Of course,they can also be used as garnish on the cupcake.
