Heart Shaped Linzer Tarts

Here are some heart-shaped sweets for your sweetie.This is a very easy recipe...just a simple shortbread dough and your favorite jam.
3 sticks of unsalted butter,room temperature
1 c. sugar
1/4 tsp. salt
1 tsp. vanilla
3-1/2 c. flour
Confectioner's sugar
Strawberry jam(or your favorite flavor)
In the bowl of your mixer,blend together the butter & sugar.Add remaining ingredients,except jam and powdered sugar.On a lightly floured surface,cut out hearts,using a cookie cutter.I made 3 large cookies,so I cut out 6 hearts,because we are making a sandwich cookie and need tops & bottoms.
  I then cut out smaller hearts out of 3 of the cookies.Since my children are hiding my cookie cutters somewhere,I had to do this by hand,so if you don't have cookie cutters,don't worry.Use a knife to cut out the heart shape.We are not looking for perfection here,just homemade goodness.
  You can see that I also kept the part I cut out(the small hearts).Save those to nibble on later!Bake the cookies at 350 degrees for about 8-10 minutes or until brown around the edges.Let them cool.
  Now for the jam! Turn over the cookies that do not have the hearts cut out of the middle.Place about 1 tbsp. of your favorite jam in the center of the cookie.Be careful not to spread it too close to the edges or it will ooze out of the sides.Now,sprinkle some powdered sugar on the cookies that are the tops.Gently place the tops on the bottoms and have a cookie party!
