Oatmeal Butterscotch Cookies

    Here is an old Nestle favorite that everyone loves.
Ingredients:
1-1/4 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
2 sticks of butter,softened(unsalted)
3/4 c. sugar
3/4 c.brown sugar
2 eggs
1 tsp. vanilla
3 c. old fashioned oats
1 pkg. butterscotch chips
    In the bowl of your mixer,blend together the butter and the sugars.Add the eggs and vanilla.In a seperate bowl,mix together the flour,cinnamon,and baking soda.Add to the butter mixture and blend well.Add the oats and the chips,and mix until blended well.
   Form the dough into  balls and place on a parchment-lined baking sheet.Bake at 350 for 7-8 minutes.The cookies should be golden.

***The dough,as well as the baked cookies freeze well.Wrap the cookies in plastic wrap,and seal tightly.For the dough,form into balls and freeze in an airtight container.When ready to bake,place on a baking sheet and bake without thawing.

***This recipe can also be made in bar form.Spread the dough out into a jellyroll pan and bake for 18-22 minutes.
