Chocolate Chip Pancakes

This is a Gale Gand recipe that I absolutely love.Although they are pancakes,to me this is dessert. So fluffy & sweet,no syrup is needed. Ingredients:
4 tbsp. unsalted butter(1/2 stick)
1c. milk(not skim)
1-1/4c.flour
1 tbsp. sugar
4 tsps. baking powder
3/4 tsp. salt
2 eggs,slightly beaten
3/4-1c. chocolate chips
Combine the butter & milk in a small saucepan over low heat until butter melts.Set aside to cool.In a mixing bowl, combine flour, salt, sugar,& baking powder. After the butter & milk mixture has cooled, add it to the eggs, then add the dry ingredients.Mix only until the mixture comes together.Add the chocolate chips.
Melt 1 tbsp. of butter on your heated griddle or skillet.Place about 3 tbsp. of batter for each pancake.Cook until bubbly on top and golden brown on the bottom.Flip the pancake and cook about 30 seconds more.
I like to serve these with a little powdered sugar on top and fruit on the side.
***It is very important that you let the milk & butter mixture cool before adding the rest of the ingredients because if it is too hot,not only will you wind up with scrambled eggs, your chips will melt immediately, and you'll have marbled pancaked instead of chocolate chip!
