Can you say YUM?These are basically cookie ice-cream sandwiches,and are they delicious!Remember the Puppy Pops we made the other day?Well,here we are using the same two doughs,vanilla & chocolate,to make this treat.To find the recipe for the dough,just check the blog recipe archives for Puppy Pops.After you have the dough made,the rest is easy!You will need:
Basic Vanilla Cookie Dough
Chocolate Cookie Dough
Vanilla ice-cream(or your favorite flavor,softened,not melted)
heart-shaped cookie cutters
mini chocolate chips
Roll out the cookie dough on a lightly floured surface,and cut out into heart shapes.Keep in mind,you will need a top & bottom for each sandwich,so that is 2 hearts per treat.I have used two different doughs,and differently sized cookie cutters.I also have decided to mix things up a bit.First,I cut out two hearts from the vanilla dough,and two hearts from the chocolate dough.I then cut out a smaller heart from one of the large vanilla hearts,and one from the large chocolate heart.I place the small chocolate heart into the large
vanilla cookie,and place the small vanilla heart into the large chocolate cookie.
Bake at 350 degrees for about 7-9 minutes or until the edges look slightly brown.Remove from the oven and let cool.
Take the large heart that is only one flavor ,turn it over,and spoon enough ice-cream on to almost reach the edges.This is the bottom half.If you put too much on,it will all just fall out of the sandwich when you put it together.Then place one of the multi flavored cookies on top.Gently place some chocolate chips around the side and eat right away,or freeze until ready to use.Enjoy!
***Keep in mind that you can use one flavor of cookie dough for this recipe.
***If you use vanilla dough,you can use a bit of food coloring to tint the dough if desired.
